Protein Packed Berry & Quinoa Flake Chocolate Muffins

These muffins are so rich and decadent, you wouldn’t believe how good these are for you! They’re packed with protein from the quinoa flakes, yoghurt & eggs, making them a healthier morning tea option to keep you charging through the day.

Whip up a batch in no time at all with our super simple chocolate cake mix.

 

Ingredients

⅓ cup quinoa flakes
⅓ cup milk of your choice
400g Summer Hill Pantry Chocolate Cake Mix
200mL yoghurt
½ cup coconut oil – melted
2 eggs
2 tablespoons Summer Hill Pantry 100% fruit sprinkles – we used a mixture of Blackberry Crunch and Blueberry Blitz  

Method

1. Preheat oven to 180 C. Line muffin tin with large patty pans.

2. Combine quinoa flakes and milk in a separate bowl Allow to sit until required.

3. Combine yoghurt, oil and eggs in a bowl. Whisk together for about 60 seconds until small bubbles form.

4. Fold in the rest of the ingredients and mix until just combined.

5. Divide the mixture between muffin tray and bake for 25 – 30 minutes.

 

These muffins freeze well for up to 2 months.

Smash Together This Easy Gluten-Free Cinnamon Banana Bread in Minutes

Whip up a perfect banana bread using our incredible gluten-free cinnamon cake mix in a matter of minutes!

 

Ingredients

400g Summer Hill Pantry Cinnamon Cake Mix
3 medium or 2 large overripe bananas – mashed
½ cup olive oil
2 eggs

 

Method

1. Preheat oven to 180 C. Line loaf tin with baking paper.

2. Combine oil and eggs in a bowl. Whisk together for about 60 seconds until small bubbles form.

3. Stir through the banana.

4. Fold in the rest of the cake mix and stir until just combined.

5. Transfer to prepared tin and bake for 55 – 60 minutes, test with a skewer to check it’s ready.

 

This banana bread is excellent served warm with butter or coconut butter!

This recipe is a healthy twist on our classic coconut cake mix and will make this our delicious, whole foods mix stretch even further. Our muffins are great for breakfast on the run. Bake a batch in advance and pop them in the freezer for easy grab & go options while packing school lunches.

 

Ingredients

⅓ cup oats
⅓ cup milk of your choice
400g Summer Hill Pantry Coconut Cake Mix
200mL yoghurt
½ cup coconut oil, melted
2 eggs
Juice and zest of one lemon
1 tbsp poppy seeds
The pulp of 2 passion fruit (optional – but delish)

Method

1. Preheat oven to 180 C. Fill muffin trays with patty pans.

2. Combine oats and milk in a bowl and allow to sit until needed.

3. Combine yoghurt, lemon juice, eggs and coconut oil in a bowl. Whisk for 60 seconds, until bubbles form.

4. Mix through oat mixture.

5. Fold in cake mix, poppy seeds, lemon zest and passion fruit pulp and mix until just combined.

6. Divide the mixture between large muffin trays and bake for 25-30 minutes.
