Ingredients

⅔ cup Summer Hill Pantry All-Purpose flour
10 egg whites
300g unsalted butter melted
175g almond meal
370g icing sugar
1 punnet of raspberries

Method

1. Pre-heat oven to 180 degrees fan forced, butter Friand cake tin or silicone molds.

2. Crack egg whites into a large bowl and whisk lightly. Do not over beat or whip into peaks. Add butter, icing sugar, almond meal, flour and combine well. Fill each mold ¾ full and place 2 or 3 raspberries in the top of each Friand.

3. Bake for 25-30 minutes.

4. Allow Friends to cool slightly before dusting with icing sugar.
