Whip up this gut healthy treat using fabulous Natural Evolution Ultimate Gluten-Free Banana Baking Flour for a perfect afternoon treat!

 

Ingredients

1 cup chopped apricots
¾ cups Natural Evolution Ultimate Gluten-Free Baking Flour
1 cup chopped dates
1 cup desiccated coconut
½ cup coconut sugar (optional)
125g coconut oil
1 egg
1 tsp bicarb soda

 

Method

1. Combine all ingredients in a bowl and mix well. Use a food processor to reduce time, Thermomix users can place on speed 8 for 40 seconds.

2. Firmly press into lined slab tin 20cmx 30cm.

3. Bake at 150C for 30mins or until golden.
